27 rocks the Chinese New Year!

I had a lovely birthday dinner party this last weekend with a small group of friends. I chose to celebrate what my 26th year was, and retrospectively, wasn’t. The theme was “Chinese New Year”. January 31st, 2014 will begin the year of the Horse. Today marks my last day as a 26 year old, and I shall hold these words close…

I absolutely believe and practice taking action in your life, and honoring the doubt that comes with it. Whether it is travel, a phone call you’ve been putting off, a new business venture, or simply a spin class that you are afraid to try, there can be anxiety and all sorts of unrest surrounding these topics. This will be the year that I refuse debilitation due to lack of experience + knowledge. My energy WILL produce great things, and the more I try that is uncomfortable and unknown, the stronger I will become spiritually, and physically. I’ve always been a confident person, and to most people who know me, they might scoff at the idea of me being “timid”. Alas, it is very present inside my being, and I too experience all the doubtful sensations that life can offers us. That offering is your moment for growth.

Now. Don’t fret. I won’t leave you without my almost 100% Paleo/Gluten Free Chocolate Chunk Cake recipe that I made! (Pictured bottom left corner)

3 Ripe Bananas
2 T coconut oil or melted butter
1/3 C Honey or Maple Syrup
1 Dropper Stevia or an additional 2 T of Honey
1 Egg
1 t Vanilla
1 C Almond Meal (I used Trader Joes)
1/4 coconut Flour or 2/3 C Gluten Free Flour (again, I used Trader Joes Gluten Free Flour)
1/3 C Cacao Powder
1 t baking soda
1 t baking powder
1/4 C Chocolate Chips (mine were choco.chunks and totes not gluten free)

350 degrees for 23 mins or until a clean toothpick is pulled (9 in. rounds)
18 minutes for Muffins

I used a cream cheese frosting full of fat, sugar, and deliciousness as my topping. So there.
