My family loves pizza, who doesn’t?! Well, me for one. I don’t generally eat pizza unless it’s on a “cheat day” or if i’ve been plagued with some serious PMS and have zero willpower. At any rate, my homemade pizzas are fresh, delicious, and unbelievably low calorie. One square slice (approximately 4×4) of this bbq chicken pizza totals about 320 calories. It is a thin, crispy crust, with house made bbq sauce(my wife made it and i’d suggest just using a light spread of whatever your fav.bbq sauce is), sliced red onion, free range organic chicken breast (Boiled then chopped), cilantro, and low fat mozzarella (a light sprinkling of this will cut your calories down easily). Though I still didn’t eat any of this magical pie, I was able to make a healthy, guilt free meal for my Family, while I enjoyed brown rice, broccoli, and a slice of chicken breast. Don’t punish those around you who aren’t on your bodybuilding diet!
Here is the pizza dough recipe I like to use taken from Allrecipes.com:
1 package of yeast
1 C warm water
1 t Sugar
21/2 C Flour
2 T olive oil
1 t Salt
1. Dissolve yeast + sugar in warm water, stir and let sit for 10 minutes or until creamy.
2. Stir in flour, salt, and oil. Beat until smooth. (I add herbs to my crust when mixing-oregano, parsley, garlic powder) Let rest 5 minutes before rolling out.
3. Bake 15-20 minutes @ 450 degrees on a pizza stone, cookie sheet, or whatever the heck you have that is a flat surface.
TIP: You will need extra flour while your rolling out your dough so it doesn’t stick. Cornmeal is an excellent base to put on your pizza stone or cookie sheet.
I use a stationary Kitchen Aid mixer, but if you don’t have one of those, some old elbow grease and a wooden spoon ought to do the trick!
